Homemade vegan raspberry ice cream for diabetics. A treat for the summer trip!

As a diabetic, you always have to check the sugar content of everything, and if you want to travel... it's even more difficult. Today I am making vegan raspberry ice cream with birch sugar. All the ingredients cost around 6 euros. I paid 8.49 euros for a kilogram of birch sugar. The ice cream takes less than 6 minutes to prepare and with 750 grams of raspberries, 2x vegan crème fraîche and 2x vegan whipping cream you will easily get 6-8 servings.
